Last week we catered a 50th birthday in Naremburn on Sydney's Lower North Shore. We cooked a number of paellas and tapas for this party of 90 people. We received some amazing feedback from this happy client which always makes the work we do memorable. We absolutely love getting great feedback (below).
During the week we were a little concerned that it would rain on the evening, so we had all jobs out with our portable marquees which we can set up in under 5 minutes if it does rain. Fortunately, we didn’t need it for this paella party with clear skies and minimal wind, just how we like it!
We started the evening off with some tapas as the guests arrived. Slow baked pork belly, with stewed cinnamon apples and crackling was first, served on a Chinese spoon. We followed with fresh figs, lemon ricotta, brown sugar balsamic and brioche crouton a massive crowd favourite on any event. Finally, we served our take on Kingfish ceviche. We thinly slice our sashimi grade Australian Yellow tail Kingfish and then delicately thread these slices onto small skewers. 10 minutes before we serve we marinate the skewers in a mixture of lime juice, celery, chilli, olive oil, cucumber and herbs. Amazing flavours and technique as the Kingfish skewers are actually partially cooked from the acid in the lime juice.
Whilst the tapas was being served for the first hour or so, we were busy in front of the guests cooking up three paellas! We cooked an 80cm chicken and chorizo paella, an 80cm seafood paella and 5 individual servings of vegetarian paella. This is something which you won’t find anywhere else, separate vegetarian / vegan paella cooked fresh onsite to cater for any dietary requirements which may be present at your event. Lots of caterers may take some out of the main pan whilst it is cooking towards the end of the cooking process, but we cook fresh vegetarian and vegan paella separately to ensure it is perfect.
We had two waiters on the evening who assisted with serving the paellas quickly and efficiently. They also ensured everyone had plenty to eat, collected all of our biodegradable bowls and rubbish and cleaned up at the event. You wouldn’t even know we had been cooking.

They were lovely to deal with from the first contact - communicative and professional yet warm and also very flexible when I wanted to make some changes a few days before the event. The set up and pack down of the equipment on the day was super-efficient and unobtrusive. The staff were discreet yet engaging and helpful. Nothing was too much trouble. Remember we are basically self-sufficient and bring all our cooking equipment, ingredients and service utensils. We then cook paella from scratch and remove all of our biodegradable rubbish when we leave. It is the easiest way to cater in Sydney. Paella catering is also perfect for corporate events such as staff drinks and team building. However, paella is most popular for birthdays and backyard celebrations.
On the same evening we also catered for two other paella events in Sydney and the surrounds. One paella team took a van out to Ingleburn. This party had our 1.3 meter pan which feeds 150 people. The other team took our other van to a paella party in Carlingford with 140 people expected. They cooked two different types of paella to feed the crowd which was also loved by all who attended.
